No Shit Potato and Ham Bake

No Shit Scalloped Potatoes with Sliced Ham


Another really simple recipe and very few ingredients, a very filling supper.  This can be easily improvised with whatever you have on hand.  This was the perfect amount for the two of us, there is only a large spoonful leftover.  Of course scalloped potatoes would be better from scratch, but given the price of milk and cheese, the pre-boxed route was much more affordable.

1 Russet Potato, peeled, quartered and par boiled (boiled until still firm on the inside)
1 can of cream of chicken soup
1/4 cup dried Parmesan cheese
1/2 lbs. sliced lunch meat, in this case, ham
pepper and a dash of cayenne if you like

I doubt you will need salt, this was pretty salty, low sodium soup or half a can and half sour cream would have made it less salty.

 I let the potato cool to room temperature before slicing it.
 Following the directions on the box of scalloped potatoes I boiled 2 cups of water in the microwave and added to the potatoes, both from the box and the fresh one.  Then I added the sliced ham (which I leave stacked up and chop into 1 inch "squares" or you know, smaller pieces), and the Parmesan cheese, the powdered cheese mix and the pepper.  I was originally going to add onions, but I was feeling a little lazy.
 I baked it at 450 degrees (that's what the box said) for about 35 minutes, then I let it rest and cool for about 20 more minutes.

It was delicious and filling, Hubby had 2 servings :)

Hands Down, Best Ever Sloppy Joe's in the Whole World, (super easy too)



Do not doubt this recipe because there are minimal ingredients, and it's easy,  I swear these are killer sloppy joe's, you could use this meat for a lot of other things too, regardless, point is, these rock!


1 lbs. Ground Turkey or Beef

1/2 an Onion, (yellow)


1 cup Ketchup

2 tbsp. sugar, white or brown

2 tbsp. apple cider vinegar

1 tsp. of cayenne pepper

1/3 cup of nacho cheese sauce


 Brown the ground meat in a pan...
 Add some chopped onion to the meat
 Measure 1 cup of ketchup
 2 tbsp. Sugar
 2 tbsp. apple cider vinegar

 1 tsp. cayenne pepper
 add sauce to meat
 add nacho sauce to mixture
 stir and let simmer until thick (about 20 minutes on medium)
